As some of you know, at the prompting and begging of friends and the support of the wonderful husband, I started a tiny food company.
Here's how it looks on the way to the certified kitchen,,,sometimes, there's another load.
On kale chip day, I wash & prep piles of kale.
Then get it spiced for the dehydrator. So, two kinds of kale chips, veggie flax crackers, raw hummus, chocolatee date deezert.
And...the latest: apple cinnamon snacks.
Happily, on the food demo day last week, we sold out of most snacks! Woohoo.
If you have a dehydrator and want to try something sweet, and pretty easy - here's the apple cinnamon recipe -
Put a cup of almonds in the blender with 3/4 cups of water and blend.
Add 3 chopped apples, 3 chopped dates, some cinnamon, some nutmeg, a pinch of sea salt, a little vanilla and a teaspoon or so of agave nectar. If you're off agave, experiment with honey, but it is heavier tasting. Blend again.
Pour into a mixing bowl and add some finely chopped apples (about 2) and a tbsp of coconut. Let sit for at least an hour.
Stir.
Spoon about tablespoon size scoops onto the dehydrator sheet covered, preferably, with teflex, but you can use parchment paper. Dehydrate at about 110ยบ for 8 hours. Take it off the teflex and continue to dehydrate on the screen for another 8 hours. The snacks will be a little chewy, not crisp.
EAT. Very yummy.

Hey, I just happened to find your vegan blog and was hoping you could help me out. My wife and I are vegan and going to be in Payson for my Grandparent's 60th wedding anniversary soon and we are trying to figure out how we will survive.
Sounds like Vita-mart may have some food we can buy? Do you know what they carry that is vegan? Tofu, tempeh, snacks, etc?
Do you know of any other markets that carry anything like this?
Do you know of any restaurants in Payson that have any vegan options?
