What kind of tea? Most teas, other than hearty herbals and very black, require some Tea LC.For white, green, oolong and darjeeling - after the water boils, let the water cool a bit before you add it to the tea. Otherwise you scald the little tea leaves, and your tea is - you guessed it - bitter.
Here's the formula we use:
White tea: cool the boiled water for 4 minutes, steep for 4-5 minutes
Green tea: cool the boiled water for 3 minutes, steep for 3 minutes
Oolong tea: cool the boiled water for 2 minutes, steep for 2-3 minutes
Darjeeling tea: cool the boiled water for 2 minutes, steep for 3 minutes
Great teas and rooibos, such as those available from our friends at the Herb Stop, usually have steeping instructions.
Remember, give your tea water a little rest, and yourself a little rest with a nice cup of tea.
