We keep having WEATHER...not as bad as two weeks ago - as evidenced by the overturned truck - but blowy and icy. Our snow is melting...so we have lots of mud. On the happy side, mud makes it easier to dig up unwanted plants - weeds. And all this water means a great spring.
As you know, we were in Yuma...why? Blue grass festival, but really other great sights to see...like this backroads sort of museum thingie.
Then we were in San Diego, where this amazing green stuff grows on the ground - I believe it's called grass.
And while camping, we used our very large and spacious kitchen. Luckily, in San Diego, I could go outside, use the Cobb™ grill and have a little more room.
Here's a quickie guacamole recipe I got from the Co-op in Ocean Beach:
Unseed and scoop out 2 ripe avocados. (If you want, save the seeds and make a tree.) Put the avocado in a bowl and add 1 chopped & seeded jalapeno - be sure to put a barrier between you and the jalapeno, and wash your hands before you touch your eyes! 1 tbsp of lemon juice. 2 tbsp of chopped, fresh cilantro. 1 chopped tomato. Mix it. Eat it. Make more because it's gone in 30 seconds.
More fun recipes coming...I'm trying a new kale chip recipe.
Eat well...have fun.
